HX Expeditions is unveiling its specially designed menus offering international cuisines aboard the Roald Amundsen and Fridtjof Nansen. The menus, which started with the June 2025 offering, have now been officially embedded into all voyages. The menus will now include rotating recipes from different countries, giving the passengers an unforgettable culinary experience.
This is part of the company’s efforts to give cuisines from all over the world the attention they richly deserve, as well as celebrating the multicultural heritage of the company’s crew. Filipino-inspired meals have been added to the menu since the large majority of the crew, nearly 70%, is from the Philippines. HX’s efforts will allow passengers aboard to experience Filipino culture, as the company aims to include culture and history behind every bite.

The highlight of the menu offering is the Filipino menu, which blends contemporary and traditional dishes. The menu is a byproduct of HX’s chefs, who have infused their family recipes and traditions into the dishes, elevating the dining experience aboard.
Kinilaw na Isda is one of the most amazing dishes, which is Tuna ceviche that uses coconut cream and fish roe as ingredients. This appetizer not only emphasizes the vibrancy of the dishes that Filipino cuisine is known for, but also uses fresh ingredients. Guests will also try a new version of the tamarind soup called Hipon Sinigang Bisque, which is enriched with king prawns and okra. This dish contains the essence of the original recipe but is transformed into a luxurious version of the soup using additional ingredients.
One more highlight is the Lechon Kawali and Adobo Duet, the crispy pork belly is served with adobo sauce, jasmine rice, and a soft-poached egg. This dish is a mixture of two often-used Filipino dishes and flavors. Kare-Kare Risotto is a more balanced option as it uses vegetarian ingredients. This dish uses the creamy risotto while retaining the signature nutty and savory profile of the peanut stew.
To end the meal, a new Filipino dessert called Turon Mille-Feuille is served. This dessert contains layers of banana custard with salted caramel ice cream. This dessert is a perfect mixture of innovative modern presentation and Filipino ingredients.
Other Global Influences
Aside from the Filipino dishes, guests at HX Expeditions can now enjoy a rotating selection from specially themed menus. Each menu is intended to showcase the different regions and cultures of the world to transform the dining experience for passengers.
As an example, the Flavors of South America menu features Argentina with its empanadas and an asado steak board served communally. This menu captures the essence of the South American continent. Argentina’s barbecue food is famously rich and hearty.
The Heart of Tuscan Cuisine offers a tour through Italy’s famous food with a menu that features its signature dishes. These include: bruschetta, Tuscan soup, Pappa al Pomodoro, and halibut served with Tuscan beans. To celebrate Italy’s diverse culinary offerings, guests can relish Piedmont gnocchi with roasted pumpkin served with goat cheese espuma and finish with a classic peach liqueur zabaglione.
For food lovers, A Journey Through Indian Cuisine features dishes like Punjabi samosas and onion bhajis served as small plates. Moreover, chicken tikka masala, palak paneer, and lentil dal are some of the curries served in the chicken thali platter. Dinner is served with gulab jamun, which the dough balls added to saffron-rose syrup, which sweetens the dough balls and gives the dish a fragrant aroma.
Catering to Dietary Preferences
Every voyage is themed, and they are arranged with some evenings of focus on the set menus. Each theme will be covered within three to four nights. There are set menus that address different dietary restrictions, so they are catered to vegans, vegetarians, and others’ dietary restrictions. Special themed dinners are highly encouraged to be reserved because they are limited within the voyage; therefore, reservations will be missed.
