Behind Siargao’s postcard-perfect waves lies a richer treasure—a culinary culture shaped by sea, land, and local tradition. Thanks to innovators like Miguel Angel “Chef Migs” Barcenas Jr., the dynamic business owner of Chef Choipao Travel and Tours. A trailblazer in the island’s tourism scene, Chef Migs played a pivotal role in introducing the Filipino “boodle fight” as a signature experience in Siargao’s island-hopping tours, blending local flavors with unforgettable adventure.
A seasoned professional with a passion for Filipino cuisine, Barcenas saw an opportunity to elevate the typical island tour by incorporating a communal, hands-on dining experience.

Drawing inspiration from military-style kamayan feasts, he and his team pioneered the inclusion of boodle fights—spread-out banana leaves piled high with grilled seafood, roasted meats, fresh fruits, and steaming rice—into their tour packages back in 2015. This not only satisfied hungry travelers but also showcased Filipino food culture in its most authentic and engaging form.
“As a graduate with a Bachelor’s Degree in Hotel and Restaurant Management and a passion for cooking, I curated the idea of creating the first boodle fight on the island with the help of my co-workers at Siargao Bleu Resort and Spa. Surprisingly, guests loved it—especially the foreign ones,” Barcenas said.
He founded Chef Choipao Travel and Tours to connect visitors with locals and showcase Siargao’s true charm through shared experiences. More than just sightseeing, Barcenas turned island-hopping into cultural exchanges—through boodle fights, local cooking, and off-the-beaten-path tours—highlighting the island’s warmth, traditions, and community spirit.

“I’ve always believed that when you truly love what you do, it shows in every detail of your business. For me, it’s about more than just tours; it’s about connection. I listen closely to what each guest hopes to experience, meet them where they are, and respond not just quickly, but thoughtfully. Because at the end of the day, Siargao’s magic isn’t just in its waves or sunsets—it’s in the people. And that’s the heart of what we share,” Barcenas added.
Today, Chef Choipao Travel and Tours stands out for its curated culinary-adventure packages, where visitors not only discover Siargao’s hidden gems but also bond over a feast that celebrates local dishes and traditions.
As Siargao’s tourism continues to grow, Barcenas remains committed to innovation and sustainability, ensuring that his tours support local fishermen, farmers, and communities. With upcoming plans to expand his offerings, he’s determined to keep Siargao’s food scene as vibrant as its waves.
